Since I was stuck in standstill traffic, I checked to see what the header of the message was. To my dismay, it was an announcement that a co-worker whom I was joking with on the previous Friday, passed away that Saturday. Not the news I wanted to hear on a cloudy rainy Monday morning. The rest of the day became a blur. I KNEW that I had to bake something to cheer myself up. <br />

Tomorrow is my monthly Mommy Pokeno game night and I have to provide dessert. I asked couple of co-workers for some quick ideas which they provided, however, I ended up going with something vegan because we have two vegetarians in our group and didn't want to have to provide two separate options.<br />

Process is simple enough: Flour, sugar, cocoa, oil, water, vanilla, baking soda etc. What surprised me was no baking powder BUT you add balsamic vinegar. WHAT? VINEGAR in cake? OH YES. Apparently, balsamic vinegar goes really well with chocolate.</div>

The <a href="http://allrecipes.com/recipe/vegan-chocolate-cake/detail.aspx?src=VD_Summary" target="_blank">recipe</a> said to bake for 45mins at 350 degrees. It took longer to bake and I had to turn the oven down to prevent burning. I made one with vegan cocoa chips and the other without (mainly because I forgot while mixing the first batch). I could have doubled the recipe, but that didn't work well for me the first time I tried with a new recipe.</div>

Side note on the icing. I felt so silly at the store. I starred at the cake section for a while looking for traditional icing containers to no avail. The kind lady that came to help pointed them out to me and I stated "no, that's cake mix". Duhhh, reading is fundamental. My excuse, I had a bad day. She then went into telling me about how she doesn't like the smell of real butter. They just happened to have the vegan butter out with some fresh bread for tasting. I was sold at first tasting.</div>

It's the easiest recipe and just as easy to make. I haven't been able to get a yeast bread to come out so good in a long time. I decided to go back to the basic white bread and bam, success!<br />

I haven't had white bread in a very long time, as I was insisting on trying wheat which wasn't working. Maybe it's because I didn't have a mixer, maybe it's the temperature, maybe it's me rushing the process, maybe, maybe, maybe.<br />
<br />
By now you know I used a mixer and let the dough hook do the work. If I have it, I might as well use it right? I couldn't take pictures of the process because the kiddies were in a "mood" and were very clingy. I usually bake at night after they've gone to bed, but that causes my pictures to have shadows. Plus I needed the bread for dinner. I made tomato soup (my DS's favorite).<br />

The inside is super moist and it tasted buttery even though there is only one teaspoon of vegetable shortening. DH enjoyed it with a bowl of soup. I'll definitely make this again.</div>

He must have been thinking I had forgotten or that he wasn't getting any. However, when you have two toddlers who are obsessed with blowing out candles, there is no choice on if there is a cake or not. In my case, I rather make one than buy one.<br />

When he was asked, his typical answer came out.... CHEESECAKE PLEASE!!!<br />

Last time I made a <a href="http://sunrisefoods.blogspot.com/2011/06/caramel-macchiato-cheesecake.html" target="_blank">cheesecake</a>, it cracked right down the center and even though I wasn't too unhappy about it, I wasn't looking forward to doing it again just yet.<br />

Anyhoo, I searched the cloud and found a Cheesecake Factory copycat recipe. There were lots of negative reviews but I went with it anyway. This time around I made sure I did a water bath and decrease the oven to slow down the cooking process.<br />

A friend that has wanted to bake with me for a while was visiting and it was perfect time to put her to work. <br />

I absolutely love Carla Hall, she is my inner funky sister. For Christmas dinner we made Michael Symon's Turketta with Salas Verde, I'll post pictures separately. It was too die for. Everyone enjoyed it and wanted seconds. <br />

Symon made his version of McDonald's egg Mcmuffin and hash brown and I thought that would be something fun for a Saturday morning. I don't really care for the Mickey D's version but this was awesome because I knew what went into it and it was easy to fix.<br />

Breakfast was a hit with two adults, myself and a friend. My husband only eats soft fried eggs, so none of that for him. Kids didn't care for the hash browns, so they eat part eggs and bacon. Two weeks prior, my sisters and I had gone to a Thai restaurant that had the most delicious curry pumpkin empanadas and I was determined to recreate some. To my dismay, when I went grocery shopping, there were NO cooking pumpkins. What's a girl that loves to improvise to do, but to improvise and use the squash I had at home already. I was a bit apprehensive taking it for Thanksgiving because they were expecting pumpkins and I was bringing squash that not too many of them like to eat anyway.<br />

I cooked the cubed squash in the oven and then sautéed some onions on the stovetop and added curry powder and my seasonings. Sorry, no pictures. I was trying to work with two toddlers at the same time.<br />
<br />
I then went searching for empanada dough recipes online. I found several and one that actually had squash as the stuffing. <a href="http://authenticsuburbangourmet.blogspot.com/2012/10/friday-night-bites-pumpkin-empanadas_18.html" target="_blank">Authentic Suburban Gourmet's</a> recipe was the easiest I could find. Hers looked so good and simple, I had to try.<br />

I love the ones that Panera sells, so I took on the challenge. The process isn't hard, but the it takes technique. I burned the first try but will give it another try soon.<br />

A warm banana bread and a cup of tea always make my day. I should make it more often, but sometimes I get lazy. I almost always will have over-ripped bananas that do not get eaten in time. I usually freeze them until I muster up enough energy to make Ackara (a W. African finger food that I will blog about soon). My kids will eat it all up in one sitting if I let them.</span><br />

BTW, most of my recipes I get from the <a href="http://joyofbaking.com/" target="_blank">Joy of Baking</a> website. I just love the videos and that the recipes have been tested. Their instructions are precise and easy to follow. However, being the person I am, I almost always change something in it because I sometimes don't like to follow directions. ha ha..</span><br />

<span style="font-family: Verdana, sans-serif;">I lessen the sugar from 1cup to 3/4cup and instead of using chocolate chips, I used 3 blocks bakers chocolate that I chopped up. I didn't have chocolate chips and figured this would work. Didn't have any nuts on hand, so I forgo that as well.</span><br />

Several times we tried going to Jordan's Pond for popovers, but nap times kept getting in the way. To solve our popover disappointment, we bought two package of their popover mix. Well it's being almost a year and I had yet to bake them. Why you may ask? Well I discovered that the pans are not so cheap. Finally remembered to ask one of my neighbors to borrow theirs.<br />

I did get him to take me to a Thai restaurant for my birthday and he was shocked that the food is not what he thought it was. What did he think it was? I have no clue. Maybe Chinese. Either way he ended up liking it. He surprised me this summer when he planted Thai basil at our garden which I took as a sign. I've had these ingredients at hand, but time was delaying me trying to make my favorite soup, green curry.... Thinking about it makes me salivate. I typically will order it from a restaurant by my job, but at $9.50 for a small container, it's a splurge and not the norm. Let that cook for a bit (while the kids start coughing because of the spice LOL). Add in the fish sauce, broth, rest of the coconut milk, basil and cilantro. Let it cook for a bit and you are done.</span></div>

Everything went well except when dealing with two toddlers, plans gets derailed. Instead of taking it out of the pan immediately, I did it about half hour later. Needless to say, the result was less than what I expected. There is a reason why they suggest to serve warm. The caramel crystallized in the pan and there was no way I can get it out of the pan without breaking it apart.</span><br />

I seasoned the chicken with tarragon and Adobo (found in the international food section). As the chicken cooked, I basked it with the drippings. I had a head of Bok Choy and decided to sauté it and add couscous for the starch. Came out awesome. I didn't use any recipe guide, just had those items on hand and went for it.</span><br />

I have slacked off and haven't posted anything for 2012. It's not like I haven't been busy, I've just being lazy when it comes to actually posting. I started this blog with the purpose of making breakfast easy for my family and soon realize that while breakfast became easy and smooth, dinner became hell. I was always coming to to "what are we eating for dinner?" with nothing prepped or even thought of. So what does a desperate mother do you ask??? I turned to my mommy list serve for help. Those women have gotten me through some rough times as a mother.<br />

I've joined a meal swap and bought a book for helps with keeping me in check with dinner. I am by no means close to where I "want" to be in organizing my life/schedule/day but by taking baby steps, I'm praying to get there and stop driving myself insane.<br />

Having two toddlers to deal with is proving quite tiring, but that's another blog. I haven't felt inspired much lately except to bake birthday cakes for both kids. <br />

My little man munchkin turned 2 in July so I made him a train cake. I came across the pan at the thrift store and figured why not. I had an inspiration site for the design, but can't find it right now. Once I do, I'll link it here.<br />

I think it turned out better than expected. I made a yellow cake and bought the Wilton's icing from the party store. Mixing bright red icing was not my way of having fun.<br />

Hence the end result. It was denser that I like, but the flavor was good.<br />

My little girl munchkin turned 1 this October and boy is she a handful. I decided to go semi homemade for her cake and keep it simple. Simple for me was trying my hand at Tres Leches cake. <br />

We had a graduation cookout and I wanted to try my hand at something no one would think I would try. I went full force ahead and tried a cheesecake. 2. <strong>Round Scone </strong>- Fail</div>

Not sure if it's the fact that I tried to bake these early in the morning with two kids crying for my attention, but they were hard. The taste was so so, but I didn't like that they didn't flake up like I wanted. What saved the day was the strawberry jelly that I had made after picking twelve pounds of strawberries from the orchard.</div>

I wanted to make something unique for my nephew's graduation and came upon a recipe from "Cake Mix Magic" magazine that called for using cake mix to make these cupcakes. Getting the colors to match his schools' was a bit hard since I had never played with coloring, but it was fun to see how they turned out. Everyone loved them. I would definitely make them again.</div>

4. <strong>Semi Homemade Strawberry Shortcake</strong> - Success<br />

Yes I know two successes from cake mix, but it was so easy to work with. I didn't have my camera, so the phone did the job. Picture does this cake no justice. It was topped with homemade whip cream and fresh picked strawberries. Can you tell it's strawberry season? LOL<br />

I wanted scones for breakfast, so adding strawberries was only natural.<br />

I love the simplicity of this recipe and how quick it was for me to make, however, I hated the wetness of it. I'm not sure if I over mixed it or not but it looks really good. It only called for three tablespoon of sugar, I thought that was good because it will offset the sugar from the strawberries. What I forgot was, the strawberries are not that sweet. SO the scones have a bit of a tart taste to them.<br />
<br />
Hubby and his ever funny comments, walked into the kitchen and said "my those are some big scones, I'm sure the green giant will be happy if he was here. Oh Oh Oh, she hooked me up!" LOL! Got to love him.<br />

I did one cup wheat/white, the mixture was easy to make by hand and the dough was nice and fluffy. I set the oven at 375 and cooked for 10-15 mins. I think next time; I’ll set the oven at a higher temp and cook for the same amount of time. It wasn’t brown enough to hubby’s liking, and I ha v e to agree that it could have gone a little longer/higher.</span></span></div>

Life has been busy, but that hasn't stopped me from baking and trying my very best to fight the ever growing battle with my good old friend "yeast".<br />

Hubby and I have decided to make Friday nights, Pizza Nights. We had a very good friend that made the first batch of yeast dough for us. We've enjoyed eating homemade pizza so far, even though I have yet to make a yeast dough on my own.<br />

Quinoa has a light, fluffy texture when cooked, and its mild, slightly nutty flavor makes it an alternative to <span style="color: black;">white rice or couscous. It's high in iron which is why I decided to try it.</span><br />

I've cooked it as a rice and also as oatmeal. The texture is more like oatmeal.<br />

After having a rough day at work, I knew that I had to bake something. Since I had quinoa at home, I decided to bake something with it and found this great recipe in "The Bread Bible". Cool book by the way!!!<br />

However, by weeks end of no muffins for breakfast, I was starting to have withdrawal symptoms. I finally decided I'll bake something, but then PROBLEM. I was out of eggs and going to the store was not an option.<br />

Sooooo, I put it off and had oatmeal instead. That didn't cure my longing to bake though.<br />
<br />
The next day, I decided to bake eggless. Big undertaking since I had never looked at an eggless recipe before. Did I have the right ingredients or was I stepping myself up for the STOP sign again. <br />
<br />
Off to the cloud I went. I found a really easy blue berry muffin recipe and I had everything except for lemon (I substituted with cardamon). I'm getting permission from the site's owner and I'll include the link later.<br />

I was very surprise at the ease of mixing and baking. What was more surprising was the taste. It was DELICIOUS!!! I never thought that I would like items baked without eggs and butter (oh yeah there was no butter included. I did use vegetable oil).<br />

His request was chocolate Oreo with full kid excitement. I should have known that it will be something with chocolate.<br />

I went to the "cloud" because other than Betty Crocker, I have never baked chocolate cake. I found what I thought was a good recipe at <a href="http://meemoskitchen.blogspot.com/2008/07/tgi-friday-oreo-chocolate-cake.html">http://meemoskitchen.blogspot.com/2008/07/tgi-friday-oreo-chocolate-cake.html</a>. Mine definitely doesn't look like hers, but the taste is rich and delicious (according to the birthday boy).<br />

Recipe is on meemo's blog, but I altered it a bit (lack of ingredient). I used cool whip with the filling instead of whipping cream. I also cut the sugar for the filling from 1/2 cup to 1/3 cup. My fear of sugar kicked in big time LOL.<br />

I couldn't search online for easy recipes because the Internet was out, so I turned to the good old "Better Homes New Cook Book 10th Edition" for cake recipes.<br />
<br />
I decided to try my hand at the traditional pound cake. Did you know that the reason it's called pound cake is because it was originally made with a pound each of eggs, sugar, butter and flour? Thank God that is not the recipe they had posted because that would not be very healthy in this "car seating" era (my terminology of always being in the car).<br />

Doing the mixture was pretty easy and it came out looking exactly as I pictured.<br />

I left it slightly covered while going to church and when I got back, it felt a bit hard. I'm not sure what I did wrong, if anything, but I would have liked it a bit softer.<br />
<br />
I also decided to ice it using one of the "fast" recipes from the same book. I decided on the powdered sugar icing but with a twist. I added Kahlua to the mix to give the sugar a bit more flavor.<br />

Took me two years from when I was given this book, to start cooking the recipes. I thought they were difficult, but I'm finding out that they are not.<br />

Hubby made this for dinner tonight. Pork chops were on sale and thought why not, let's give it a try (we don't normally cook pork).<br />
